Butterscotch Pie

Butterscotch Pie
I don't sell pies, but do love sharing them with family

Butterscotch Pie Recipe

6 tbsp butter
6 tbsp flour
1 3/4 c brown sugar
2 c milk
pinch salt
3 egg yolks, beaten (reserve whites for meringue)
1 tsp vanilla
1 (9in) pie shell, baked

Melt the butter in saucepan, remove from heat. Add flour & gradually add milk, stirring constantly. Cook & stir over medium heat until thickened & bubbly. Reduce heat. Cook & stir 2 min. more. Remove from heat. Stir about 1 cup into egg yolks, return all to saucepan. Bring to bubbles. Cook & stir 2 min. more. Remove from heat & add vanilla. Pour into shell.

Meringue:
3 egg whites
1/4 tsp. cream of tartar
3/4 c sugar

Beat whites with cream of tartar until soft peaks form. Gradually add sugar, beating until stiff & glossy. Spread evenly over filling, sealing meringue to crust. Bake at 350 for 13-15 min. or until golden.
